What a week we've had!
Tapped as RCIA sponsors back in the fall, we attended a beautiful Easter Vigil Mass and are happy to report that all 7 of our catechumens/candidates are now full-fledged Catholics. We even went back for Easter Sunday morning Mass, since Paul had the opportunity to play piano and our "sponsee" and his family had also planned to attend.
We learned Saturday night that another woman we know -- both as a recent retiree from Paul's department and co-chair of the RCIA group -- and her husband were planning Easter alone, so they graciously accepted a last-minute invitation to join us for dinner, and Paul and I managed to quickly whip the house into shape AND throw together a rather presentable meal, considering we hadn't given much thought to side dishes when we planned on just the two of us.
The ham was delicious, although it took MUCH longer to heat up than our recipe led us to believe. Also unexpectedly, the ham ended up trapped between the oven's top elements since the bones extended upward as it cooked. It took two people to get the ham out of the oven!
Yesterday we celebrated our second anniversary with an excursion to a mediterranean restaurant in Anderson, IN, that had been recommended to us. We expected... well, a *restaurant*... and were surprised to find it's actually a remodeled diner in a tiny strip mall. The food was delicious and it would have been a thoroughly enjoyable outing had not a large group of rude college students chosen that time and place for dinner. Their loud voices, raucous laughter, foul mouths, and cell phones were highly inappropriate and detracted from the whole experience.
The highlight of the meal might well have been the appetizer -- "Saganaki". It's a sauteed Greek cheese flambeed table-side in rum and topped with fresh lemon juice. If you can't order it locally, it's worth the trip to Indiana. (So are we, of course.)
All the excitement seems to have caught up with me today: I've got a mild sore throat and am generally feeling under the weather.
Hope you're all doing well!
